July Garden Explosion – What to do with all those cucumbers?
Now, now, get your mind out of the gutter. This time of year our gardens and our farmer’s markets are an explosion of fresh vegetables, especially cucumbers. Here’s a list of things you can do with your Cucs!
1. Slice them up and use with Hendrick’s gin for a nice, clean, fresh taste in your gin and tonics.
2. Cucumber salad. In a bowl, slice up some cucumbers, red onion, a bit of sour cream, freshly chopped dill, a splash of vinegar, salt and pepper, and if you want, a tablespoon of sugar.
3. Refrigerator pickles. In a bowl or a Ball canning jar, add slice pickles, about a cup of white vinegar, slice onions (optional) salt, pepper and the secret ingredient celery seeds. You only need to let this sit for about an hour. De-lish!
4. Cucumber sandwiches. In a bowl mix some cream cheese, sour cream, fresh dill, fresh chives, garlic powder, salt and pepper (to taste). Spread the mixture (it should be thick, not runny) on white bread slices (crusts cut off) then layer cucumber slices over the mixture, top with another slice of white bread, cut on the diagonal. So classy!
5. Use cucumbers instead of lettuce on your sandwiches for some extra CRUNCH!
6. Lastly, use your imagination. If your mind goes there…remember to grab the Helmet Grease!
